SUMMER ROLL BALLS WITH FIT PERTH CLUB

Who doesn’t love a Cadbury Summer Roll? That classic chocolatey nougaty bar covered in shredded coconut that we’ve been enjoying since the ’80s is as much-loved now as it was back then. Except now there’s a healthier version, with less fat and sugar, yet still has all the yumminess of the original. Created by the active babes at Fit Perth Club, this better-for-you version of the Summer Roll is perfect for an after school, pre-workout, mid morning snack. Roll on summer!

Ingredients

1 cup cashews

1 cup dates

1 teaspoon vanilla essence/extract

1 teaspoon cinnamon

1/2 cup shredded coconut

1 teaspoon coconut oil

1 teaspoon peanut butter

1 teaspoon honey

1/2 cup cacao

Method

Throw all the ingredients into blender.

Spoon out and roll into small balls.

Roll in shredded coconut.

Refrigerate for an hour.

Bask in the sun with your Summer Roll Balls and a big glass of nut milk!
